can you know which fruit you'll be getting BEFORE choosing a layout?

Like when you restart the game and wants to reset, when the gameplay song shows up with a town and a random character, if lets say the tree over there is apple, will that mean the fruit you'll be getting when you choose a layout is gonna be an apple or?

there's no way to tell, unfortunately. what you see on the start-up screen doesn't determine what you'll have in game.

for example, when i was starting my second town, it showed purrl walking around with pear trees, but when i created my new mayor, she wasn't even a resident and i had orange trees!
