I was talking to one of my villagers, and they asked about moving. I accidently clicked "please move" and they agreed saying they were moving soon. I do NOT want them gone & now I'm in PANIC mode. Help!?

Well, if you haven't saved since it happend you can press the home-buttom and quit the game without saving Then start the game, walk up to the villager and say no as they will tell you they are moving again.

NOTE: All progress you made since the last save will be lost!

If you didn't save yet, you can just reset and go back in and wait for them to ping you, and you can change their mind. Otherwise, you can just keep talking to them until they bring up moving again. You can also use an alt to get them to ping you so you can change their mind.

Though you can sometimes convince them to stay on days after they told you that they are moving (not sure if it's all the time though)

What if I make an alt just to get them to stop moving? Will that work? Or is it normal for them to bring up moving again to the same character?

Don't worry! Every day until they move, that villager will ask about moving and you can have another chance to convince them not to move. You still have time!
