can anybody explain how to get the rarer deep sea critters to me?

There really is no trick. Just have to keep looking. Took me 3 days just to get the crabs I needed. Learning shadow sizes kind of helps.

The shadow size matters depending on the species you're trying to catch, same as the fish.

okay, that makes sense. do the bubbles differentiate between a breathing critter and a shell or something like that?

I don't think the bubbles change at all. But another thing that differs is the speed at which they swim away (or the lack of swimming for something like sea grapes).

okay, that makes sense. I have been getting a lot of still shadows, that turn out to be sea grapes lol. worthless

Make sure you do lots of diving in your town! Most of the sea creatures don't live on the island (just mentioning since you said you were getting a lot of sea grapes). Also the really fast shadows tend to be the crabs with higher rarity.
