It's been almost a year since my birthday, and I told my villagers what I wished for, and ever since, they haven't stopped bringing it up. I've even said "It came true!" and they still ask me. Will it eventually stop when I make a new wish?

Yes, but then they'll start all over with the next wish. They should calm down with it after a week or two, though. At least, they have in my experience.
I'll go for a while without hearing about my birthday wish, then all of a sudden it'll be the only thing my villagers want to talk about for a week or two. So it comes and goes in spurts for me. Right now, all of my villagers are going through a phase of telling my mayor about my alt's birthday wish, which was made in October.
And, yeah, once you make a new birthday wish they'll stop talking about the old one and just bring up the new one. I think you have the option to not tell them your birthday wish if you don't want to, but I think that comes with its own set of dialog if I'm not mistaken.

I wished for a white carnation one year and never got it. xD Well I did, but only because I traded for it on the forums. The game didn't help me out any lol
No, unfortunately, or else my favorite villager would be living in my town rn. Tough times :/
Funny enough, most of mine have come true. I wished for Wolfgang, he moved in, I wished for Tutu, she moved in. I also wished for 50mil bells and to get Sanrio items, both of which came true. The only ones that haven't come true (yet) was for Pekoe to move in and Punchy. The Punchy wish did come true, but not in that birthday year.
Basically, you need to be careful what you wish for, especially if there's a chance you won't be playing on your birthday the next year. In my first town, the villagers still bug me about my wish for a laptop I made back in 2013. I never got on during another birthday, so I haven't made a new wish yet. The worst part is I got my laptop the same day I made the wish.
That?s funny you mentioned that, I just noticed that my villagers have been bringing it up to me a lot lately out of nowhere, and I wondered why they keep asking me about it multiple times? Guess it won?t change until the next birthday wish in January
