Yummy vegan recipes!

Probably the most simp(le) stuff but it was my go-to lunch for work back when I worked 6 hours a day:

mix a couple of avocados with beans/chickpeas and drench it in vinegar and/or salt.
 
Doesn't have a lot of that fishy taste, which makes this a great recipe imo

I cannot say enough good things about baked firm tofu. I grew up in an Asian family so I’ve consumed several tonnes of tofu within my lifetime. This is a good foolproof recipe, but there’s many similar ones. Once you‘re happy with the base, it’s just a matter of adding spices you like to taste :)

 
nothing really that specific but from the top of my head i can recommend mary's test kitchen, peaceful cuisine, liv b and cheap lazy vegan on youtube! they have some really nice recipes imho and hopefully you will find something for yourself!
 
Oooh, I recently went overseas to Norway and it was my friends Birthday, to celebrate my friend and I made a carrot cake for him, hope these help!

Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1/2 cup non-dairy milk (such as almond or soy)
- 2 tsp vanilla extract
- 2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
Instructions:
1. Preheat your oven to 350°F.
2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, and salt.
3. Add in the vegetable oil, applesauce, non-dairy milk, and vanilla extract. Mix until fully combined.
4. Fold in the grated carrots and chopped walnuts (if using).
5. Pour the batter into a greased 9x13 inch baking pan.
6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool before slicing and serving. Enjoy!
