Today, two of my villagers were crafting and both times, one of my friends disconnected and the animal stopped crafting. However, after going in their house, the workbench is still out. Has anyone else had this happen? The villagers in question are Julian and Drago—neither have a workbench as part of their normal house setup.

Yes, that happens, and you can get them to start crafting again if that is the case. Save and end and open your island back up and they should still be crafting.
Ooh, that worked for Drago. I’m hoping Julian isn’t stuck like that but thank you for the tip!
