As the title says, which edition of 3DS should I get? Options are Happy Home Designer, Super Smash (Red), Super Smash (Blue). Make sure to tell me which shop in Canada has them in stock.
Unfortunately, I don't know Canadian shops. Between those, I'd probably chose the New 3DS for the speed and significantly better 3D function, but I do prefer XL models, so if possible, I'd go for an N3DS XL and get myself some clip armor.

I'd recommend either of the Smash 3DS XL consoles, the color doesn't really matter. The New 3DS is more powerful and faster. However, if it's anything like the New 3DS XL, you'll need a specific screwdriver to unscrew the back panel to change the microSD card if you ever felt you wanted more memory.
If someone can clarify whether this is the case with the non-XL New 3DS, that would be good. If you don't need that screwdriver? I'd recommend the Happy Home Designer New 3DS because I personally think the games look better on a smaller screen.
You'll still need a screwdriver. The bottom plate needs to be screwed on because parts are exposed without it, while the top plate is simply clipped on, with no parts exposed without the plate.
There's no reason to get a 3DS XL when the New version is just better and is the same price. Regular XLs also have super fragile hinges. Both Smash 3DSes look kinda ugly imo and they don't include the game, it's just a system.
Nintendo only sells the New 3DS faceplates in their online store and there's only 6 options. (KK Slider, a Mario Mushroom, 2 solid color ones, a polka dot one, and a green camo one.) So you don't get many choices unless you import.
If it isn't obvious enough I'm trying to tell you to get a New XL.
Out of those, I'd go for the HHD N3DS. I have that model myself, and it has a lot of little features I love:
- changeable face plates
- removable battery
- serial number under the top coverplate, which is kind of a very big deal for me. The protective film always peels off of my other systems and gets rubbed off.
And the more obvious reasons of faster load speeds and more powerful. I could have gotten an XL version of the N3DS, but I have small hands and wrists, so prolonged play on my original 3DS XL would make my wrists sore and hurt like hell.
But if that's not an issue for you, maybe a N3DS XL would be a good choice for you as well.
I actually searched on all of the well-known retailers in Canada and the New 3DS Happy Home Designer bundles are all sold out. So yeah, you're pretty much out of luck for owning a New 3DS model, at least for quite some time. That is, unless you want to rely on secondhand market (e.g. eBay, Amazon, flea markets) and either have a lot of money to burn or armed with stern patience.
If you don't want to bother with that much of effort, you could always try your hands getting on any New 3DS XL variant. Sure, they don't come with a game at the moment, but it's most likely the best value you could possibly get right now, especially if you never owned a 3DS before. Peoples there already mentioned several reasons why you should favor getting any New 3DS model over the older ones and 2DS.
Out of those, I'll get the HHD bundle because it's the new 3DS but if you can somehow be able to get Majora's Mask or Hyrule Edition new XL, that'd be better
New 3DS model is about the size of a vanilla 3DS, albeit a bit bigger. So are the screens. And the model is much more comfortable to hold, since the rough edges are gone. The older 3DS XL model is of course significantly larger than the New 3DS.
I personally don't like the 'New' 3DS they moved around basically everything I like about the original design to annoying places for me. I also prefer the XL size as its so much nicer and you can details more clearly. Also don't let the size scare you I've been told I have tiny hands and I can handle an XL just fine. The design choices for a 'New' XL in North America is extremely poor with just plain red or black.
The only positives I find the 'New' 3DS has over the old ones is the face tracking (which honestly doesn't matter to me as I use 3D all the time and have long gotten used to how to hold the system. Plus I play in the dark 80% of the time anyways so the face tracker wouldn't work.)
One thing I really DO like about the 'New' 3DS is the faster processing power as I do find the older models a bit slow at times but it's not too big of a deal honestly I'm used to things that work even slower so hey.
Personally the choice is up to you which one you get. For me the 'New' model just wasn't worth it. When I went to get a second system I just bought another older XL and I love it.
If it were me I'd get the Blue Smash one as I love blue and I've seen that system and it is very nice even for an older XL. Again it's up to you though.
I have the HHD New 3DS, and I like it a lot. The only problem is, I'm not a fan of the cover plates they have. And if I took the cover plates that I have right now off, the parts would be exposed.
