What's the rules on customizing items?

Hi, I think I may have the answer but I'm not entirely sure and I've been curious for a while. I know you can customize SOME crafted items.
Are all items bought from Nook and his two toddlers more of a luck of the draw kind of thing where whatever variation is being sold is what you get?
Are the select few crafted items all you can actually customize on the diy table?

There are Nook items you can customize, but not too many. Typically, if they have fabric on them, you can customize that. For example, you can change the color of the blanket on the loft bed and the pattern on paper lanterns. You can also change the screen on the laptop. Things like that.

You can’t customize the antique bed though... I was so disappointed because the white bedding is boring
