I haven't played in my game for about 3 months, and I want to start playing again...How much will change? Will have one of my villagers moved out? Or will I be lucky enough to have no one moving out?

Weeds will have grown and a couple villagers may have moved out is the worst damage I can think of.
If you had the beautiful town ordinance than you should be fine except for the villagers :P

if you TT back to the day you stopped playing (if you can remember when that was) i'm pretty sure no one will have moved out. you'll still have a few weeds though, i think.​

What happens if it isn't the exact date to which I stopped playing?

So it totally depends. On the last date that you played, if someone said that they wanted to move out and you told them no, then I would play todays date as no villagers will have moved out. If you don't remember the safest bet is to TT back to the day after you last played and TT forwards day by day until someone asks to move and you tell them no. If you don't TT back to the exact date then there's always a risk someone will have moved out.
 
Yeah shouldn't be too bad. I think if a villager pings to move and you keep them, you could go as far into the future as you want without the possibility of losing someone though. NO idea if that works for if you left that day.
 
If you only have one copy of ACNL check your activity log for the last date played.
If you stopped a mover than you are okay to jump ahead. When you start on todays date the villagers will ask you where you were and than go back to normal. Check for a mover after you talk to all the villagers. One usually will ask to move or a rumor of a mover will happen.

Read posts where player make a new player. Send them in to find out if anyone has move or planning on moving on todays date.
If everything is fine than it's okay to jump ahead. I've never tried it. I just stop a mover and jump ahead when I'm ready to play again.
 
Isabelle may announce a random move out, but I think it'd be unlikely if you've stopped somebody from moving already before you left.
 
weeds will grow, and even a rafflesia may grow. at least one villagers would have moved out already. i think thats all.
