I use a combo of stone patterns and clovers. I don't like the look of an exclusively clover path so I use patterns with it. Dirt paths look nice but take way too much time to make and maintain in my opinion.
I use pattern paths for my main pathways but also a mix of every other type of path you've listed. I like making my clover paths into dirt paths. I would limit your use of flower paths (if it's the kind of flower path I'm thinking of) since you can only walk over them, not run. Pattern paths are so versatile but if it's a 2+ width path, it can take up a lot of room. I put all my paths on my other characters so I have room for clothing designs.
I don't know whether people think they're tedious or just not known, but in my town, I have been attempting for the past year to create a path system using bushes. It works pretty well except for when a villager moves in and cuts off the path. (To check it out, use the dream code in my signature! )
