What do you consider as "rare" items?

I think the zodiac items are pretty difficult to get and the wedding cakes?

It probably varies from person to person, but I'm finding kitchen items to be difficult to find. At least, the variants I want are rare!

gulliver items ofc lmfao.

its all about rate of visitation in this game + item pool they can give you. personally, i see both celeste and gulliver the least out of any of the NPCs - just 3 times a piece my whole time playing. and for both, what they can give you comes from a huge list of things, so the potential to get in demand items (pagoda, moon diy, etc) and such is v little ! sucks, but also is kinda fun. i still get really excited for them and that's the joy.

I checked discord looking for a genuine Gallant statue to display in my island and people were selling them for 60-100 nmts.

I'm pretty sure wedding stuff isn't even available to TTers right now lol. It's limited to the wedding event which will take place starting June 1 so after that they should be more common, I think.

par for the course though, most of the english-speaking ACNH community plays in the northern hemisphere so mush stuff/other fall stuff is pretty hard to get if you don't TT

seasonal items like the cherry blossom stuff - they’re a pain to get, especially when bunny day was going on, and even then any normal balloon that spawns isn’t guaranteed to have a seasonal diy ;u;

"Rare" is pretty relative. For me, rare items are furniture that I need at the given moment. Seasonal items, Celeste DIYs, etc will eventually be obtained over time so I don't fret over it.
