Say if I traveled a day to get rid of my villager and get one in and then I traveled backwards to the day I started on, would the new villager still be there:3

Im not exactly sure what you mean by this, but id say no. TT'ing backwards always counts as a day of progression in game

The new villager will still be there.

TT'ing backwards doesn't "undo" everything that happened after the day you TT'd to. It counts as one day of progression.
