When does everything re-stock? Are certain items from the shop here on tbt limited?

It depends. Some items (like birthstones and seasonal collectibles) are limited. Others aren't. I think there's also some items that are released in batches and may be temporarily out of stock but get restocked shortly after.
I don't know when everything re-stocks, it depends on the item and the availability of the forum staff, I believe. The birthstones usually get released within the first week or two of a month.
