Everyone here has such great suggestions! I really wish Nintendo would listen 
The things I personally want the most are bulk crafting, shorter NPC dialogue (at least a setting for it), varied villager dialogue, mass mail deletion, and old furniture sets added back in! I hate having to open letters individually to select an option to delete them, especially when having a full mailbox evem decreases FPS and stuff. You'd think they'd make it easier to remove the excess!
Having an option in settings for NPCs to cut to the chase a bit better would really help, or even just including a faster dialogue speed? Idk! With this they could also have an update for villager dialogue (as many others have mentioned) so that we don't hear more of the same stuff. It really puts players off from interacting with their residents!
I really miss so many older furniture sets and options. I feel bad complaining about this because I know it's not easy to have all the sets available when they like adding them back via updates, whether its a seasonal one or event based one, but I feel like they could at least return some of the core sets from past installments. Sets like the Regal series, Rococo, Sleek, etc are all sorely missed!
I do expect them to bring back old NPCs like Brewster eventually. As much as I want them now, I know it's sort of inevitable (like Lief, Pave, Reese, Cyrus, etc.) so I'd prefer to hope for a few more QOL changes!

1.) Changes to make the gameplay more interesting and less repetitive [Mini-games with villagers/friends, more official areas to fly to, improved villager dialogue, customizing homes of villagers, dressing up villagers in your town instead of Harv's island, improved holidays/events, etc.]
2.) Additional custom design slots
3.) More fence variation/use of the DIY bench to customize the color
4.) Need more furniture in general
5.) Transfer furniture from Pocket Camp to New Horizons
6.) Ability to make purchases easier [purchasing multiple items at once, no more restrictions on how many orders you can place a day, etc.]
7.) Skip repetitive dialogue
8.) Craft mutliple items at once
9. Placement of rugs outside
ACNH has a lot of potential, but Nintendo has always seemed unresponsive to its user feedback. It's been nearly a year since the game was released and we are not even given simple updates for the most-requested quality of life changes.

I want more hair colors, like seriously. Imagine the possibilities we could have but we’re stuck with plentiful shades that are either too similar or too light. I just want my light brown hair back.
