recently I have been noticing people are customising beach balls/ balls to look like watermelons, however when I go to customise these items I am unable to??

It's not a customization. The watermelon beachball is a different item than the colorful beachball.

The beach balls are not customizable, the watermelon one is a variant!

They aren't customizing them! There are different beach balls (Like how the soccer ball, and volleyball look different but are titled ball) You can find them in balloons or your Nooks Cranny to search for different variant (Sort of like how the Nook Miles items all have different variants)
