If anyone has tried both, which one do you recommend, given that I won't be using any mods?

Also, will Stardew Valley on Switch receive future updates like the PC version?

Thanks

I don't own a Switch, but there are no drawbacks to the PC one - it's the one that's going to be most reliable and polished (overall). But this game's developer isn't lazy, and is known for being very diligent about console versions, so I'd say get whichever one you'd feel better playing. If you'd think playing on a PC won't be as relaxing as on the Switch, then get the Switch version, and vice versa. I'd personally just opt for the lower price tag.

The big advantage of the PC version is that you have full access to the fanmade mods. There's some pretty great ones out there that improve quality of life for the game. I honestly can't see myself going back to "vanilla" version, because I use some of these mods a LOT.

But the big advantage of the Switch version is it's more portable. That would certainly be handy. I play Stardew Valley on a laptop, but obviously a Switch is easier to carry around than even a laptop.
