Oh my goodness, probably over half of my villagers fit into this category, only a slim percent of my villagers were actually dreamies that I specifically looked for, most were random move-ins that grew on me, or in the case of Eunice, a villager I adopted 100% on a whim.
Alice, Marcie, Lobo(who moved away... RIP), Portia, Drake, Snake, Lucha, and Amelia are definitely some top highlights of villagers who weren't dreamies but grew on me anyways, although honestly it'd be shorter to list the villagers who don't fall into that category.

i freaking love papi xD he was one of my original villagers on my original save, and i didn't know much about acnl or dreamies or anything of the sort at the time
but i just fell in love with him xD
i don't have him anymore though ;-;

I felt that way about Rory. I didn't like him at first, mostly because of his mustache. x'D But then I grew to like him and I still have him after months. I don't plan on letting him move out anytime soon, haha.

I actually got very atattched to Ed and Monty. They were some of my first villagers for this town and came as random move ins. I quite like Ed as a smug...and he quickly became one of my favourites. I'm still sad when I think of having to let him go, even now. I just had so many other villagers I really wanted to try out (the rest of the smugs for example). If I get around to doing this second town properly, I will look into getting him again

I thought Gala was the weirdest looking pig thing. I hated the colour pink and I wanted her OUT of my town

well.. um.. now my entire profile is just dedicated to her so... a little change of heart is what may have happened

That's how it was with Blanche. I saw her in my campsite and I thought she was pretty so I let her move in. Didn't think much of her until I actually got to talk to her and realised how much I liked her. She was a permanent resident for a while until a TT accident happened and she moved away. Luckily she send me her picture so it's okay.

That's happened to me with a lot of villagers! I like getting to know new villagers and finding new favorites.

One of my favorite villagers Clay was a starter in my current town. I don't remember how I started liking him all of a sudden but I did. He used to be on my loading screen a lot of the time, I swear he was there over 50% of the time at some point! It started creeping me out. Now he's not showing up that often.

Tex is another villager I didn't like before he moved in. I was really annoyed by him at first because he had moved right in front of my house! But he was so cute that I ended up liking him anyway. He's amazing! Couldn't kick him out despite his terrible house placement! I really wish I could have him back but I keep missing out whenever someone has him moving out of their town.

And that's just two of them... There are many more, all of them didn't become outright dreamies but favorites/liked villagers nevertheless! Katt's living in my town right now, and I started really liking Gigi, Hamlet, Tank, Keaton, Coco, Bob, Filbert and Marshal after they had moved in. There should be even more but I can't remember everyone right now.

I remember the first time I got Chief! I freaked out soooo hard!
