Question on Time Travelling

If I set the time and date to where it's supposed to be will it effectively set me back in time and progress?

If you time travel backwards, the date will change, but your progress will remain the same.

Progress stays if you go back in time - example: stores, villagers, projects

Stuff only really changes if you go forward huge leaps at a time.
