I have a quick question, I'm away for the holidays so I wanna check acnl when I get back. I last checked acnl on the 22nd of December so would it be okay to wait until the 2nd of January to check the game again? I did stop someone from moving last time I played. (I saved and continued after but I don't think that would affect the game.)

Yes everything should be fine. Stopping a mover on the day that you last played and not going into the next day works.
No villagers can ask to move until you play again.
When you arrive on January 2 make sure to talk to the villagers. 11 days have pass and you need to get them to say where have you been out of the way. After that talk to them to get rumor mover/talk or a mover ping. There should be a mover. Once you stop the mover save/quit and talk to the rest of the villagers you missed. If you miss some the next day they can be a mover.
