How much space does a villager's house need? I have patterns scattered all over town in places where I don't want this villager to go but he's still bouncing around and hasn't even tried the few places I actually want him to go :c also where a villager just moved out, he refuses to go exactly where that villager had moved out, he'd go on space back and one to the right and I thought I might have accidentally saved because he would not go anywhere else for like 5 resets.

A villager only needs 3x3 feet(if you wanna call those individual squares that). They can move, I believe, 1-2 feet within a cliff or river too. I don't know how close they can move to pwps, but Stitches used to live within less than 6 feet of Brewsters. Villagers really don't need much room, making plotting very tedious, even after the update. I recommend using the old method, where you would create a second save file and either save (to keep the plot) or restart without saving to reset the plot.

Patterns have been like this so far where I've had Stitches And Phoebe move in right..

I had to plot reset Shari 4 times in my town with a couple of amiibo cards, to get her in the right place. While the old method takes longer, there is way less risk involved, as far as the villager destroying your town goes.
