I recently reset my island that I had an attachment to because to be honest as much as i loved it I felt like I needed a refresh. Since then I just haven’t been able to play on an island for more than 2 days without starting over because I don’t like it anymore. I just can’t seem to get the same attachment level or any attachment at all for that matter when it comes to any new islands that I make. Does anyone have any advice on how I can gain any sort of attachment at all to an islands?

Attachment is something that grows over time rather than something that develops in an instant. To develop an attachment to the island you will need to stick with it.
Remember that a new island in ACNH is a blank slate. They're all more or less the same to begin with. It's what you do with that blank slate that gives it life and meaning.

I agree that I think the big aspect is just pushing through the first couple of weeks and seeing if you start to get more attached over time. It won’t happen instantly, especially if you had a different island that you already got used to.
I haven’t reset, but I know that when I used to make extra towns in the older games, it always seemed hard to get used to the new villagers, layout, etc. But it got easier with time. In ACNH, I was skeptical about my island when I decided to stop resetting at launch (I only reset four times, but I wasn’t sure if I would be happy with it). Now, I love my island.
ACNH is big on customization, so I would wait until you get to the point where you really start to make the island your own. Get through the tutorial phase, play for a couple of weeks past that, and see how you feel. You can always terraform and swap villagers later. For me, I think the first big turning point was adding my three villagers past my starters, and getting to lay out their homes. The next turning point was once I had my basic island layout done (villagers invited, rough pathing for getting around town, neighborhoods, etc.; I go for a rural feel, but it started to give me a sense of ownership). So set a few goals, push through the initial uncertainty, and see how you feel.
