To be honest, Zelda bosses are both my favorite and least favorite bosses.
I like bosses that require some kind strategy to kill, but not "shoot the blue button, then the red button, then his weak spot appears". I like to charge in and test different techniques using different skills I've gained throughout the game. Unfortunately, Zelda bosses tend to be "do this, do that, repeat".
And yet they tend to be my favorite bosses. Let's just use Twilight Princess bosses as an example. My favorite, by far, was the final Ganondorf fight. It was essentially a straight up sword fight. There were two or three ways to get behind him, but the ultimate goal was to stab Ganondorf in the back. You could grapple with him, execute a series of rolls, or just charge around like crazy and hope to get lucky. But most bosses in that game require a specific patten to kill, which bugs me. Yet they're so fun.
