I liked the one from Elebits. :D I play it over and over again. All of them, especially the final one.

To be honest, Zelda bosses are both my favorite and least favorite bosses.

I like bosses that require some kind strategy to kill, but not "shoot the blue button, then the red button, then his weak spot appears". I like to charge in and test different techniques using different skills I've gained throughout the game. Unfortunately, Zelda bosses tend to be "do this, do that, repeat".

And yet they tend to be my favorite bosses. Let's just use Twilight Princess bosses as an example. My favorite, by far, was the final Ganondorf fight. It was essentially a straight up sword fight. There were two or three ways to get behind him, but the ultimate goal was to stab Ganondorf in the back. You could grapple with him, execute a series of rolls, or just charge around like crazy and hope to get lucky. But most bosses in that game require a specific patten to kill, which bugs me. Yet they're so fun.

You forgot the fourth! Hit Ganondorf with a fishing rod. Duh!

Anyway, Storm you're favorite boss is when you fight off Resetti to get the golden toilet, right?

The final bosses of:

The world ends with You
Donkey Kong Country 2 (The real final boss)
Earthbound
and Elite Beat Agents on the hardest difficulty, just because I felt so accomplished when I finally beat it xD

I like the boss fights in all of the Castlevania titles. All the Metroid
titles had extraordinary boss fights as well and of course so did Zelda
Ocarina of Time.

The Donkey Kong Country titles had fun boss fights also. And I guess I
could say so did Banjo-Tooie.

The boss fights in StarFox 64. I never get sick of Andross, in particular. He seems very evil, and there is always something satisfying about beating him! The guy blinks MONOLITHS. Bada-s.

hmmmm i liked some zelda fights, the last boss of no more heroes, sephirot on kingdom hearts 2, i like the ones that u need to run the hell around and do lots of stuff to attack him xD

I liked the final bosses in The World Ends With You and the final bosses of Crisis Core:FFVII.
That's all I can think of right now.
