I've had Dora in my town since the beggining, and it's the second time that she asked to leave and I actually said yes.. I still have time to revert that, but I'm not really sure about that. Seeing other normal villagers that honestly look much more interesting than her, I'm quite tempted to let her go. But again, she was and still is my favorite up until now... So I'll just let you guys decide. Should I keep Dora or not?

that’s a hard choice. i personally never let my favourite villagers leave because i have a strong attachment to them and don’t want to see new villagers in my town. however, others may let them go, in hopes of starting a new friendship with a new villager; overall seeing a fresh new face in town. it’s all up to you, would you rather see a fresh new face, or keep your favourite villager? in the end, you can always wait for someone else from your town to ask to leave if you really want a new villager but don’t want to let dora go.
She is a character, she may have been your favourite but it is always really exciting adopting a new and fresh villager into your town to change things up a bit. If it would help, you could always look to find someone who would love her to take her into their town! I would say go for it, get a new villager and grow to favour them as well. Given how many amiibo cycle shop there are for new leaf, I am sure you could get her back later down the line if you so wished. Either way, it’s really up to you and what you want for your game!
