I'm moving out someone tonight by moving an amiibo in their place. Tomorrow, when they're gone, let's assume the new villager hasn't plotted yet. Would I be able to invite a new villager from another town in to override my amiibo move in?

Whoever you choose to move in by kicking someone out, their plot is always going to appear the next day unfortunately.
