Pretty sure it's 8100 a day not including good or bad luck.
So I just went and hit my money rock to check and got the following:
100, 200, 300, 500, 1000, 2000, 4000
That adds up to 8100 which is the amount I get each day from the money rock.

You forgot the 8000. You have to hit it immediately after the character recoils after each hit. You cannot move backwards, you have to be locked into that square by solid objects, like holes.
Observe:
The red square is the rock.
The green squares are all possible locations for bells to fall out. The squares with purple dots are where you should stand.
The blue squares are where the holes should be, depending on where you stand.

All in all, 9 squares directly touching money rock. 1 square is reserved for your mayor, and the other 8 spots are open for money bags/coins to land on.
Typically, I just dug 3 spots behind my mayor and hit the rock from directly above it. Sometimes you won't get it even if you performed the procedure correctly.
I am not a noob to AC, ok. I am not lying when I say that I got 8,200 and I don't know how it happened as it has never happened to me before. I am also good at maths, so I know what 8000 and 200 is.
