So far, I’ve actually caught Piper “stealing” villagers’ catchphrases twice!! Is this interaction the only way they “steal” catchphrases or is it random? Have y'all encountered your villagers red handed like this?

yep! that’s her “stealing” it, but by the end of the conversation they will both end up having that catchphrase
What I think is weird is that she got Diana's on the 26th and then she got Chops' yesterday the 30th... I didn't even hear her say Diana's catchphrase. Is this interaction the only way they "steal", like do they actually have to talk to each other?

Yup. I remember Boyd and Marshal talking to each other. Marshal likes to say sulky, and after that conversation, Boyd started using the catchphrase "sulky."

Yes, they do it through convos. It is pretty sneaky! You join thinking it is gonna be an interesting exchange, but it ends up with a change of someone's catchphrase.

I agree, because this only happens with phrases you come up with, right? Not the ones they already have?
Yeah, they copy the catchphrases you come up with and it can be annoying if you want to keep a specific catchphrase or something.

ive had villagers copy catchphrases even if i didnt sit through that convo. i made biff's phrase 'bean jam' and then winnie just started saying it out of the blue. this post is actually the first ive read that villager conversation, so i guess it might still count the conversations even if the player doesnt see/encounter them?

Yes and no. I've encountered this several times. My villagers (mostly jocks) have conversations that lead them to share the same catchphrase. And most of the time, when I talk to them, they already had someone else's catchphrase.

Sometimes I wonder if one villager becomes friends with another (or if they visit their house) also leads to this. It's just something that crossed my mind...
