I would make a peppy Wolf, name let's see Candy, because is close to being a canine don't know but def a peppy wolf. And a Jock Wolf too, bad at names Champ...if there isn't one. And I have seen pictures of some characters from other AC titles that seem interesting. I also agree with a female unicorn. And maybe a counterpart to Drago. Also more male rabbits and cats as well as a normal male type in general.
As for types, would like to see some more expansion there or at least more differences in dialogue among the types, maybe dialogue based on species not type or if you have two of the same for it to recognize that and make them distinct somehow...just thoughts not sure how they would do it.
