Update: I also found a hercules stag?? and a rainbow stag in the same day i think my stag collection is almost complete besides the one that spawns at like midnight xd (my mom is g00d and doesn't let me play at night when i need me some shut-eye ;D) oof lol

The giant stag and scarab beetle appear from 11:00 P.M. to 8:00 A.M. If you can't play late at night, then you can try to catch them early in the morning. If that's too short of a window for you, you can arrive at a NMT island before 8:00 A.M. and then put your Switch in sleep mode until you have time to go bug hunting. The fish and bug spawns at a NMT island only depend on the time you arrive at the island, so if you arrive before 8:00 A.M., you can catch giant stags and scarab beetles in broad daylight several hours later. TTing is another option if you're willing to do that.

yea. they're super rare. I've caught enough to donate and make the model then gave up.
