I really want dirt roads, but the grass doesn't seem to want to die. I've been running around a lot, but to no avail. I've placed PWPs and houses where I want the dirt roads, but there's only so many areas where you can place them. Anyone have any tips?

Running around on the grass is really the best thing you can do. I've seen that some people host "running parties" where they invite people to go to their town and just run around all over the paths, but there's always the slight danger that somebody will mess up the town. If it's too hard to get dirt paths, though, you can always just use the patterns to make paths.

Yeah, i'd say just run on it a few times every day to get some dirt. It works, as I have experienced from accidentally running by pressing my shoulder buttons.

As you mentioned, PWPs are a great way to make your paths, I place and cancel one at the end of every day in my new town and in the morning I have a new patch of earth to enjoy, but yes, you can't put them anywhere near the plaza, rivers etc etc. So it really is a case of running lots. I like to put on the timer and just spend 5 minutes running and skidding on each stretch of path, it's easy enough to do while focused on something else. It takes a long time to get the dirt roads. I'd suggest placing a qr code over where you want the path to be, or doing a border with flowers. This way you can see exactly where your paths are going to be. I think it takes about a month of running to get the full dirt paths, so just run around wherever you go. On your way to visit a villager? Run. Going to sell something at ReTail? Run. Basically run all the time

You don't need that long if you run back and forth, back and forth, back and forth a few days in a row. The game will get the hint you're wearing it down, and a day after it will be slightly lighter, the next slightly lighter, etc and in about 4 days you'll have mostly dirt.

It takes a lot longer than a week, I have a patch of grass that's 2x10 squares, every day I set my timer and run on it for between 5 and 20 minutes, it's been a week and no change, it's really a gradual process and on the healthiest grass it can take quite a while. I agree with people who say it takes a month or so.
A safer, cheaper, and reversible alternative would be to use QR code dirt paths. I'm sure if you can't find any online, someone on here could make or sell you one.

I have the opposite problem, I want grass, but it won't come back. I've tried planting flowers to cover the entire ground and waited 6 months without playing. Nothing makes it come back!! Argh. I've never ran in my town either.
I heard watering flowers on the dirt helps the grass grow back.

But there are parts of paths that cant neccessarily be made nicely, and who wants another character just to make dirt paths? Its pretty much a win-lose, and we want the win-win
