As for getting bored, I know that feeling. I'm a serial-resetter, but I think I have finally found a town to keep my heart and attention. The best advice I can give is this:
(1) work on collecting all your dream villagers. Not only will it help you feel proud of your town and like you've invested a good deal into it, but having all of those dream villagers
really does make the game so much more enjoyable.
(2) If you don't already, open up at least 1 or 2 more side characters for your game. Try to theme their house in some way (cafe, hotel, flower shop, school, biology lab, etc.) and work on redecorating.
(3) Work on fully completing your catalog and bug/fish/diving indexes.
I think the main thing that changes it from a boring, typical town to something that will hold you excitement is just working on/having those dream villagers, and having goals and a creative vision for your town's development. c:
