So there are a few things I'd love to know!

1. Can they still alter their house and put up their own furniture after you redesign their interiors?

2. If I incorporate a crafting table or kitchen in the design, will they use those when making DIYs or will they still randomly pop out their own?

3. If I make certain spaces a bit tight, will they be able to access those areas where our player character would have to sidle through? Like will I ever walk into their house and catch them sitting on a chair that is half a space in front of a dining table?

4. And this is just a for fun one since I know this isn't a thing, but does anyone else wish we could also go into their closets and customise the clothes they could wear? I think that would be super cute ^_^

Can’t answer the rest, but as to 2, I know when villagers have DIY benches in their standard furniture (because I still have one of my very original villagers, and because my second sisterly, Sylvia, has a workbench as part of her default,) they use the one that’s in their home. Can’t imagine that’d change if you give them a new one. I haven’t caught Pancetti or Sylvia cooking yet off the top of my head so I’m not sure if they use their standard kitchenettes then or if they put a compact one in the DIY bench’s usual place.

I would love to know the these as well. mostly cause some of my villagers have ended up with clothing items that look awful on them . . . . Poor Raymond has a pink sheep costume . . . .

You can't change their clothes. I tried but you didn't get the option like you do in HHP. It makes sense, since regular villagers rotate outfits. I figure that redesigning their houses might help, since you can give them the clothes you'd like them to wear and delete any they decide to display. :P

I'm not sure about the first two but I think they might still display items as usual and I assume the workbench/stove works as normal, so if they have one they'll use it, and if not, they'll temporarily bring out a random one.

No idea about the other question, sorry. :(

Yes, I believe they can.

2. If I incorporate a crafting table or kitchen in the design, will they use those when making DIYs or will they still randomly pop out their own?
From what I've seen, it seems 50/50. I'd honestly just make sure there's an open area for a dresser or another 2x1 item for them to replace.

3. If I make certain spaces a bit tight, will they be able to access those areas where our player character would have to sidle through? Like will I ever walk into their house and catch them sitting on a chair that is half a space in front of a dining table?
Yeah, as long as they can access the chair from the side, they will sit on it. However, I don't know if this is true for sofas.

Sometimes.
