It doesn't have to be anything long or complicated, but it can be if you want!
I'll start: Right now I'm eating greek yogurt topped with grape nuts (type of cereal) and a diced green apple :3
I also really like making home made tomato sauce. It takes no time at all and has lots of flavor. Here's my recipe
Ingredients:
Olive oil
1 or 2 small containers of cherry tomatoes, or more if you're making a larger batch
1 tablespoon of minced garlic (or more depending on how much sauce you're making)
Basil, thyme and oregano- fresh or dried, and chopped. The amount is up to you.
salt and pepper to taste
Sugar (at the end if the sauce tastes sour/acidic)
Directions:
Set your burner to medium heat, and put enough olive oil in the pan to coat the bottom. Add your garlic and cook until fragrant (1 or 2 minutes).
Add your cherry tomatoes, fresh or dried herbs, salt and pepper, give everything a good stir, and cover the pan with a lid.
*Note: the water from the cherry tomatoes keeps the garlic from burning after the 1 or 2 minutes you've already cooked it*
Once all the tomatoes have popped, mash them with a fork (for a smoother consistency), and continue cooking over medium heat until the excess liquid is gone. Add a tiny bit of sugar (don't overdo it!) to your sauce if it tastes sour/acidic. 1 teaspoon should work. The tomato skins will still be intact for the most part. If you don't like that, put the sauce in a food processor and blend.
Viola, you have tomato sauce
I use this for pizza, pasta, and chicken rollatini alla parmigana (if you want that recipe, let me know!)
