lol! Maybe I am blind or just have the worse luck in the world right now, but these two creatures I just can't seem to find. Is there something I should know about them that would help me find them or for them to spawn?

What creatures have you struggled with?
 
The sunfish you can catch more easily on the shark mystery island. Obviously you have to be lucky enough to land on it. There's also Bamboo island for beetle spawning and you can bring extra palm trees.

The giraffe stag was the very last one for me and took 3 nights to find.

That's how I FINALLY found the stag. I used a bamboo island and searched the palm trees until I noticed a big, burly, black stag with long horns. And then, of course, you really got sneak well- they're super skittish.

I've actually not had any trouble with the Sunfish- my best advice for that is to fish shark-finned fish EARLIER. They start spawning long before most sharks and you therefore have a higher chance of any given fin being one earlier in the day.
