I think that the first boss from Super Mario World was pretty easy.

Saddler from Resident Evil 4.
You Got worked up because of How hard Krauser was (it basically involved running around sections of ruins with him shooting mines, an uzi, running up to you and stabbing you or somit else, then you had to fight him and he had this mutated arm, i used Infinate launcher, it took 3 hits.).
THEN you work your way through some hardish bits, then you face Saddler, who is Decidedly easy, you just gotta either:
A. Shoot out the eyes on one of his legs till one gives out then jump on him and stab his eye
B. Run up the 3 raised platforms and throw the switch when he gets close to throw iron bars at him, then run up to him press and button and stab his eye
C. Use a rocket launcher, see the cutscene, get the Special Rocket Launcher and kill him.
It was a grave Disappointment. I spent all my money upgrading my weapons before him, then relised i could of got the Chicago Typewriter afterwards...had to play ALL THE WAY THROUGH AGAIN to get the damn thing x_x
