I played NL without doing online play and I don't think I missed out. And I think you could do NH without playing online and still have a great experience.
Certain aspects would be slower, such as collecting DIYs. If you time travel, that may not be as big of an issue. As for non native fruit, unless you really -want- to have all of the fruits, you would still make the same amount of bells for selling any non-native fruit. You can find one type on non-native fruit using NMT, so you'll be able to take some back to your island and plant it.
I do think it may be a good idea to quell your expectations and certainly don't compare your game with what you see from people online. However, I didn't do any kind of online activity for nearly a month into NH, and I was already very happy with how my island was turning out. I think you'll be fine if that's how you decide to play the game.
