My favorite pig villagers are: Ganon, 2nd is Rasher and last is Agnes
I was so surprised when I found out I could get pig Ganon in this game, I had to immediately get him and Wolf Link! I forget which Zelda amiibos did what but I had them and had Ganon move in right away.
He has an awesome house and outfit, Ganon is easily my favorite pig!

My favorite Pig villager is a bit of a toss up between Boris and Cobb.
My first inclination is to say Cobb since his design makes me think of a mad scientist, the furniture set which he has in his home, that has taken his experiments a bit too far and has made himself a zombie somehow due to his green flesh and yellow eyes. I currently have him as a resident of my main, horror-themed town for this reason.
Meanwhile, when I look at Boris, I like to imagine that his underbite are lower-jaw vampire fangs and I like to think that he's sort of a mash up of the Universal Monster movies. The name, Boris, would tie-in with the actor Boris Karloff who portrayed Frankenstein's Monster in 1931's adaptation of Frankenstein, Bride of Frankenstein, and Son of Frankenstein, as well as Imhotep from the original 1932 version of The Mummy in the Universal Monster movies as well as a bunch of other horror movies throughout his career. The vampire fang bit that I like to interpret his teeth as would be reminiscent of vampires in general, but in this case specifically Dracula as portrayed by Bela Lugosi in the 1931 movie adaptation of Dracula. What ties it all together for me is that his house is basically just a viewing room for movies, featuring theater chairs, a screen on the back wall to watch the movies on, speakers on the wall on either side of the TV screen, some popcorn, and it's all complimented by the Hallway Wall and Lobby Floor. Additionally, being a classy British gentleman, Boris Karloff was known to drink tea during breaks while filming, and what other item is offered in Boris' RV but a Cup of Tea? It just works too well for me even if it is unintentional. I unfortunately don't currently have Boris as a resident, and am strongly considering it, though at the moment I'm grappling with whether I should move Bella the Peppy Mouse into town to get Peppy Public Works Projects suggestions and replace her with Boris after the fact (requiring me to get the card for him), get Boris outright, or hope that he'll be available as a villager in the next Animal Crossing game and pass him up this time. Tough to decide.
Speaking of tough decisions, yeah, it's difficult to choose between the two. Cobb's design feels a bit more concrete to me, but I really like my interpretation of Boris and I prefer Boris' Cranky personality over Cobb's Jock personality. I feel like my opinion can change at a moment's notice on this issue, but for right now I'd probably have to say my favorite Pig villager is Boris.

As far as other Pigs I like are concerned:
My third favorite is definitely Rasher. I like his scars and I love the weird smile he does sometimes when speaking. I had him in my hybrid circus/magic show town as a sort of carny worker, but ended up deciding he didn't fit and replaced him. I hope to reacquire him in the next Animal Crossing game.
Fourth Place goes to Chops because I have him in the aforementioned circus/magic show town as a sort of ringmaster (due to his red ringmaster coat and awesome hair and moustache), but eventually I decided my mayor fits the role better and that there were other villagers I'd like to bring into the town. He'll be forced out in time to make room. Might bring him into next Animal Crossing game, unsure.
I'm also pretty cool with Agnes, Curly, Gala, and Pancetti, though none of them really offers as much interest to me as those previously listed. Curly, at least, reminds me of and is possibly inspired by Curly of the Three Stooges and I had him as a resident of my first New Leaf town before I deleted it to create what is now my main horror town.
