I was just watching a play through since I didn't encounter them yet but you need 3 items of each bug and fish and they will create models of them.
I think they just do one model per visit so it might be worth saving up some fish in advance.

I've only had Flick so far. He made me an Orchid Mantis model and my husband got the regular Mantis model. I've got 3 tarantulas in storage for his next visit!!!

I've got the snail as it's my favorite...err... bug?

But yeah, I'm going to stock up on some now. I want to get the goldfish so bad.

I love Flick's models so much. The Emperor butterfly of his is my favourite, it's so detailed and shiny.
