Shadow of the Colossus has some pretty good boss fights. Along with God of War. It's tough to choose though.

last colossus = amazingly simple, compared to a few others

Still in the middle of Twilight Princess (Ogawd I haven't played it in months)

the music/theme for the giygas fights are epic, but the actual boss fighting... not so much :/

easy to beat, but the concept, OH THE CONCEPT.

I really liked every boss from Patapon 1+2, so just choose one except for Dodonga and Majidonga.

But Zuttankarmen was just so awesome, so probably him.
