A heavily forested Zen town would work nicely. As for names, nothing can come off the top of my head, I'm afraid.

Which theme do you like best?
Which theme gives you more ideas on how to landscape?
Which villagers would you like to have, and which theme do they fit the best?
It'd be better to think of these things instead of asking what other people prefer.
It's your town and you'll be the one visiting it everyday, after all.

Personally, I think you should combine the two and go for a zen forest town.

As for names, I suggest either Mori or Shinrin for the town name. Both words mean forest in Japanese, although mori can also mean jungle. And for the mayor's name, I like Hinata because it can mean sunny place or sunflower.

I second this idea. I couldn't figure out if I wanted more of a zen town or a forest one, so I just decided to combine the two.
