So I’ve been going to the shop everyday and buying every item as well as plants and saplings to try and upgrade the store but what do you actually need to achieve the requirements in order to upgrade the store? Do you need to spend a certain amount of money like in new leaf and have it for a period of time or is it different?

1. Mabel needs to have visited your island.
2. Bought/Sold 200,000 Bells at Nook's Cranny.
3. 30 Days have passed since Nook's Cranny has been built (since plot placed, I think).
If you meet these requirements, you should (hopefully) see the announcement from Isabelle in the next couple days.
