It depends on what they're doing there. If there's a trade going on, I'll talk a bit: "Here's your _____ amount of Bells," "This is for you," etc. If they dropped things off and are picking them up, I don't really talk and I just let them do their business, while I do mine (usually selling things or talking to villagers). But I always check back every now and then to make sure that they're doing what they're supposed to do.
I'm not really comfortable with having a lot of people in my town at once unless I know them really well. If I don't know them I can't really trust them, so if people come over uninvited and I hardly know them I'll say "I'm sorry, I have to go," (I've had to do that before but sometimes I really do have to go,) or I'll say something that politely tells them that I can't stay on and that they must leave.
