Videogame That Can Play Instruments?

I'm asking for a videogame that can use instruments and play music. And I'm asking for instruments that can play EACH different note. Example: Legend of Zelda Ocarina of Time had the Ocarina and you could play EACH different note. Moving the Control-Stick and pressing L & R could alter the notes so you could play any note you want in an octave.
So is there any Videogame that has any instrument that could play any song/notes you want?

PS: Any Videogame except Guitar Hero and Rock Band... because there's background music there, and you really can't play specific songs. No Rock Videogames, please. And not Wii Music, because the notes play at random. >.<

You actually have to have a guitar for Rocksmith, though. It's not cheap.
