For furniture and clothing gifts you can reliably predict how much they'll like it based on this site. I'm not sure how the miscellaneous items are handled. It could be random, it could be based on their intrinsic likes/dislikes, or based on their personality type...I haven't looked it up, but if it's anything other than random it'd be worth noting.

._. Well I can't have been the only one not to know of that resource right? xD I'm going to add it to my OP.
However, at the same time, I feel that most people who mail things to their Villagers do it for their own customization (what they want them or wear, or display in their house) rather than for the Villager approval, which increases from letters anyway; but someone will benefit from this! Thank you!

You're very welcome! I like to try to find items they really like that work well with the rest of their furniture, so that site helps with that. I haven't tried giving them furniture they hate in a letter to see if they say, "It's the thought that counts," like they do on their birthday, though. It'd be funny to get a letter struggling to react positively to your gift. XD

Just thought I'd add to this and confirm that you can write "Welcome" letters to villagers after they moved in. Blanche just moved into my town on Sunday, I sent her a letter on Monday, including words such as "Welcome to <my Town's name>" and attached a present. Today I received a letter back saying, "After getting your welcome letter, I knew I made the right choice moving here." It was just a pleasant surprise.
