What are some good HM slaves I can use? I was thinking of Bibarel but I'm not completely sure.

Bibarel for sure, I think Linoone learns a lot of em, surf, strength, and a couple others.

I don't think Bidoof can learn water HMs.

Too bad I'll have to change in HeartGold and SoulSilver, since it does away with Defog and brings back Whirlpool. =p

Mew - it can learn every HM and TM xD

But you'd best go with a normal type like Linoone.
