Playing with locked flowers/trees Or Strive to get them all?

Has anyone decided to play with just certain selected flowers or trees? Or are you someone who strives to get them all? (I guess I am asking more about locking trees because I am sure the locking flowers is a yes). Do you feel that "less is more" with it and have more uniqueness? Or are you someone who feels it is "incomplete" unless you have them all?
And lastly, if you have locked what have you chose?
 
I don’t have any orange or coconut trees because I feel like semitropical-climate fruit would mess with the temperate/boreal theming of my town/forest. I also omitted bamboo because I’m going for a western aesthetic. Otherwise anything else is on the table.
 
Atm, I’m trying to get all the flowers. When I’m closer to being finished with my island, I am not sure if I will use them all. My favorites are the hyacinths & windflowers. The only flowers I know for sure that I’m keeping are most of my lilies. Initially I was planning on using only flowers that grow in Europe since my theme is medieval and is based on Dragon Age, but I really love the hyacinths, so I’m going to scratch that plan lol. I like having both types of trees so, no to the question about trees.
 
I have all the trees since a mix of them looks nice on a natural-ish island. I do have almost all of the flowers on my island. I really don’t like the pansies so they’re the only flowers I’m missing
