If you'd like an unique theme you probably shouldn't go with pastel and fantasy, the 2 most overdone themes as far as I know, next to like forest or smth.
If you wanted something unique I'd suggest you to go with something different revolved around a few certain villagers that fit a theme. Like a pirate town, cuz there are a few villagers Like Rod, Rory (pirate themed) and Frank (a green parrot). Then just fill the gaps and put other villagers that you think will fit. It could be some beachy town or smth.
You could also go for an indian fairytale theme with like elephants, violet, paula or something. That'd really be cute imo. Youd just have to try to differentiate it a bit.
You could also make a town with dreamy colors and a lot of lace? That kind of falls under pastel, but you could try adding a dreamy feel to it. You could also look for really bizarro paths that have like pink flying whales on them.. I've seen them around from some jap player but no idea where. But those would add to the dream theme.
At some point I was personally planning to make a scifi town with all superhero villagers and nerds w/ glasses.
Sorry I'm bad at making up names for towns.
Pirate could be Pirette or something, just play on the word pirate.
The Indian fairytale could have some Indian word but idk.
Dremaria or Dreamland or something for the dream town.
But in the end the choice is up to you and you shouldn't feel bad for going with a generic theme if it makes you happy.
// Another idea would to make a royal desert town with Ankha, who I saw was a dreamie of yours. You could get some other villagers to fit said theme like Anabelle (armadillo/pangolin), Vic (who was some archeologist or smth) and so on
