I got a used Wii a little while back, and I have a Vizio HDTV.

When I go to play the Wii, the display is very fuzzy. How do I get it to display a more crisp, proper resolution? Do I need a certain cable or switch?

Pretty sure you were using a composite cable (the one that have yellow, white and red plugs) with your HDTV. That will only let you display the resolution in SDTV (480i) and is best used with most CRT TVs.
For your HDTV, I recommend you get a component cable and set the resolution display to HDTV (480p) to output a much better image quality.

I am using component cables and the 480p option in the wii settings is greyed out.

Bump, I'd really hate to re-sell this system I bought specifically for City Folk >.>

Is everything connected to the right sockets? The white and red part are the audio ones, while the green, red and blue are for the video.
Have you set your Visio HDTV to 480p? If you chose higher than that, then this might be the reason why your video quality was poor.

There is no resolution options for the TV in it's menu, just widescreen, stretch, and normal. :/
