Does anyone else feel like that everyone in Animal Crossing has like a whiteboard on their door that they write notes on when they leave or go to sleep so you don't knock? lol.

I'm not sure I understand the question. Do you mean when the messages like "X is asleep right now" or "X isn't home right now"? I always felt more along the lines of a sign on the door, but a whiteboard works to lol.
