So ... just finished work, and started a island, but now I’m wondering what are the non changeables which will affect my later decision as I want to be happy and not make any mistakes. Like I did with new leaf, like grouping things strangely.

You won't be able to add or edit rivermouthes and im pretty sure you won't be able to move the resident services center, i don't think you can change the airport colour either. Also another thing to note is that even though youll be able to cut down all the native fruit trees on your island if you dont like the fruit it'll still be on your passport as your native fruit!
