I was wondering if it would also work to save the game at 5:59 AM, then wait for 6 to come and she will be there? If she does happen to be in town that day, can I pass her fashion check, then reset? Will it still count?

Yes, it works. I did 3 of my 4 fashion checks by travelling back.
